In my house, chicken is inevitable. One of the only foods my two small children will eat without complaint is it, so I usually have a lot in the freezer.

We like thighs (they have more flavor!) and frying them on the skillet for extra-crispy skin, but my girls don't. I bake our chicken now.

Despite its ease, it's a delicious dish I'd be proud to serve visitors. Put olive oil, salt, garlic powder, smoked paprika, and pepper on the baking dish to make a wet rub. 

No need to wash another bowl! Dry the chicken, rub it with the wet rub, put lemon juice on it, and roast for 25 minutes.
